Probably each of us at least once has tasted a cheesecake. There are a lot of variants of this wonderful cake, as well as recipes for its preparation. I had tried few of them and picked up the most common ingredients. Therefore, having at home cream cheese or cottage cheese, you can pamper yourself and cook a cheesecake with strawberry jelly.


Ingredients (for a 25 cm diameter form)
For the dough:
100 g butter or margarine
60 g sugar
1 egg
200 g flour
10 g baking powder
50 g cream or sour cream
For the filling:
500g cottage cheese
200g sugar
3 eggs
75 g semolina
For strawberry jelly:
250 g strawberries
100g sugar
10 g gelatin
Preparation:
To butter (margarine) add sugar, stir it well. Then add egg, cream (sour cream), stir again. Add flour with baking powder, knead the dough. Roll it to fit our form, spread in it making bumpers height of about 5-6 cm.
Preheat the oven at 175-180°. While it is getting warm enough, prepare the filling.
To cottage cheese add 150 g sugar. If cottage cheese is moist enough, add semolina, if you want need, add a little bit more. Add the egg yolks, stir it well. Egg whites beat with 50 g sugar into air light consistency. Whipped whites add to the mixture of cottage cheese, stir gently, in order not to damage the structure of whites.
Spread the filling in our form accurately. Bake for 35-40 minutes. Check readiness with a wooden stick. It should be dry when goes out of the filling.
Baked cheesecake take out of form, put to cool. You can cover it with a towel.
While cheesecake cools, prepare strawberry jelly. Ground strawberries in the blend to consistency of puree, add sugar and gelatin. Pour into a saucepan and warm up, when it comes to boiling, turn off. When the mixture became a little cool, pour it on top of the filling, align the surface.
Leave cheesecake to cool fully. It is good to put it at least a 1-2 hours into refrigerator.
Chilled cheesecakes decorate with strawberries and enjoy the taste.

By the way, if you want, you can substitute the strawberry jelly by any other ftuit jelly, or even do cheesecake without it.
